I can’t help but wonder, when did I last indulge in ‘Breakfast in bed’? After a little bit of umming and ahhing, I quickly remember that my last breakfast in bed was my 32nd birthday and I was seriously hungover. Classy.
I know it’s been too long since I shared a breakfast recipe, I’m going to be honest, planning our Wedding was a strange ole time for me – I can’t deny that it ever so slightly took over and my love for prepping our meals in advance diminished in a furry of peonies and tulle. Naturally, I was planning a comeback, which just happens to be in the form of an extremely simple but ever so pleasing breakfast recipe. Year’s of dieting and fear of ‘sugar’ faded my memories of how much of a pleasure the simple coupling of oats and golden syrup is. Throw in a few berries for ‘health’ and eggs for an additional protein hit, a brief stint in the oven and suddenly breakfast for a few days is all present and correct.
Plus, who can resist the sweet smell of baked oats and golden syrup?
I’m not going to lie, I’m currently rather distracted by Love Island but I do feel some savory and cake recipes are needed because let’s face it, who doesn’t love cake? But for now, I’m still continuing my long-standing commitment to the humble oat. Also, some snacks to eat whilst watching Love Island wouldn’t go amiss either would they?
- 150g Oats
- 50g Blueberries
- 100g Raspberries
- 300ml Almond Milk
- 2 Whole Eggs (Beaten)
- 1.5 Tablespoons Golden Syrup
- Pour 150g oats into a large mixing bowl, then whisk and add the eggs, milk and golden syrup and mix until a smooth mix forms. Finally stir in the berries, pour into a heatproof dish and bake.
