Oat and Almond Pancakes

I think that life is there to be enjoyed, who wants to deny themselves the good things in life?

I quite like allowing myself a little time here and there to day dream, I day dream about food, about being a inch or two taller, about having longer hair..

My current day dream is a super efficient version of myself, on target at work, perfectly organized at home, no split ends and a perfect blow dry and oh…I’m definitely wiggling into Herve Leger on a regular basis.

I can’t remember the last time I had a occasion to wear a bandage dress, as a matter of fact I bandaged my ankle up a few weeks ago but it definitely wasn’t slinky.

Never mind…Look at this…


Okay..now let’s make them less picture perfect and much more appealing..


The above is reality, when the pancakes collapse, when you actually speed up taking photos so you can sit cross legged and dive into the pancakes at the speed of lightening.

I like those moments and I certainly don’t share..Well if you asked really nicely then maybe…but reality is…I’ll shout out the recipe and send you to the kitchen!

Oat and Almond Pancakes

Serves One

Ingredients 

*40g oats (I used Myprotein fine oats)

*10g Ground Almond

*Half a teaspoon natural almond extract

*1 teaspoon argave nectar

*1 Egg

*150ml Nut Milk

Method 

Place all your dry ingredients in a bowl and mix, then whisk and add in your egg, followed by the milk, vanilla extract and argave nectar and mixed thoroughly to create a smooth batter.

Now leave the mix in the fridge for 30 minutes to thicken up (you can skip this part if your short on time) and heat a suitable pan fry the pancakes two at a time (you’ll know it’s time to flip the pancakes when they start to bubble a little on top).

You may want to place the pancakes on a tray in a warm oven if your making a larger batch (sharing is caring apparently).

Serve with yogurt, berries, nut butter, honey or whatever else your heart desires.
