Nutty Chocolate Chip Cookies With Ciao Gusto

“Cookies make the world a better place…”

For this post I’ve teamed up with Ciao Gusto to cheer up your day with the simple fact, you’re only 25 minutes (and very little effort) away from enjoying delicious chewy, soft cookies, stuffed with nuts and chocolate chips.

For me, cookies are like an old friend, reliable, straightforward and guaranteed to bring a smile to your face. To shake things up, I’ve given these cookies a slightly nutty twist, which means you’ll need a high powered blender or food processor for this recipe. Before you dismiss the idea of grinding mixed nuts to a fine powder, hear me out. The blend of flour and ground mixed nuts works perfectly, giving the cookies a pillowy soft texture and sweet/slightly salty flavor.

If I was to ask you what your dream cookie flavor was, how would you answer? For me, it’ll always be chocolate chip, with a preference leaning towards a high frequency of chocolate chips, you know it makes sense? The chocolate chips are optional, but really we all know that they are the option that 90% of people wouldn’t want to miss, however, these would be just as tasty with finely chopped nuts and/or dried fruit. Check me out, I suppose you could say I’m helping you cover all options.

I’m of the opinion that if you wanted to really shake things up a little and take it to the next level, you could always treat yourself to some ice cream or chocolate spread to make the ultimate “Cookie Sandwich”. Whilst I’m thinking of it, I think that’s my weekend treat sorted!

Nutty Chocolate Chip Cookies

Serves 10




Ingredients



  1. 125g Ground Mixed Nuts (Ground into a fine powder)

  2. 130g Self Raising Flour

  3. 125g Butter

  4. 200g Sugar

  5. 1 Medium Egg

  6. 100g Chocolate Chips

  7. Pinch of salt


Instructions

  1. Start by pre-heating your oven to 180 degrees and lining a couple of trays with greaseproof paper.

  2. Then, using a high speed blender ground the mixed nuts and add these into a large mixing bowl, now add in the flour and mix until combined. in separate bowl, cream the butter, sugar and egg, until thoroughly combined, a find that a hand held mixer comes in helpful at this stage. Slowly add the nutty flour mix, a sprinkle of salt and the chocolate chips.

  3. Using an ice-cream scoop or tablespoon, scoop the mix into balls and place onto the greaseproof paper – Allowing plenty of space for them to spread as they bake.

  4. Bake in the oven for 8-10 minutes (depending on your oven) or until lightly golden brown, then remove the cookies and leave to cool for 20 minutes.

Don’t worry though, if cookies aren’t on the menu this week, you can always make this delicious Nutty Ginger & Mixed Spice Granola.
