Honey, Cranberry & Raspberry Slices

We need to talk.
I’ve not shared a recipe in too long and this is simply not acceptable. Why? Because it gives the impression I’ve not been stuffing my face with a whole load of goodies, which is completely untrue.
Last weekend I tried ‘Duck and Waffle’ for the first time, and what a pleasing combination that was! Duck and Waffle is now something I very much recommend trying if you have the chance and have a palate comfortable with the sweet/savoury mix. It was also my birthday weekend, my partner baked me a rich chocolate mud cake, filled with lashings of buttercream, covered in icing and shaped like a weight plate labelled ’31 KG’.
Let me explain; I turned 31 and my initials are ‘KG’ and my birthday gift was a power rack/cage (With lat/low pulley) and I’m still very much in the *love hearts in eyes emoji* zone when I think of my new toy.
I’ll grow up one day.
Anyway, today I’m sharing a simple recipe for slices which are perfect for an afternoon snack, dessert or just because you fancy a little something sweet?
These slices are made from every day kitchen cupboard ingredients, they only take 15 minutes to rustle up and will keep for 5 days in an airtight container, or can be frozen for future snacking.

Honey, Cranberry & Raspberry Slices
Ingredients
85g Self raising flour
55g Oats
55g Puffed Rice
55g Flaked Almonds
125g Raspberries
100g Dried Cranberries
100g Butter (Melted)
95g Honey/Agave (I used a mix of the two)
1 Egg (Whisked)
Method
Pre:heat your oven to 180 degrees and line a baking tray with greaseproof paper (My baking tray was around 8 inches by 8i nches).
In a large mixing bowl, add oats, flour, puffed rice, raspberries and dried cranberries – Mix until combined.
In another bowl, mix the whisked egg, honey and butter and then add this to the dry mix and stir until the dry and wet are perfectly blended.
Pour the mix into your tray and bake for 20-25 minutes depending on your oven.
Allow to cool, slice and serve.
