Grain Free Chocolate Pancakes

My dear friends, I’m happy to remind you that we are heading towards that wonderful time of the year again..


Pancake Day is something I do rather enjoy celebrating and because it only comes once a year, I like Pancake Sunday to feature regularly in my food planning. Also, I’m happy to share that a Monday can be considerably improved, by starting with pancakes

These are not for the faint-hearted; rich chocolate pancakes stacked high and layered with creamy coconut yoghurt and drizzled with an indulgent chocolate sauce made with coconut almond nut butter.

Whilst these are indulgent, you should tuck right in without any guilt at all! The pancakes are a fulfilling mix of coconut flour, almond Flour and protein and the sauce is made with healthy fats. I like my pancakes piled high, tasty and made with ingredients I can pronounce and if you feel the same these are going to be perfect for you.

I would just like to point out that the ingredients for these pancakes have been provided by the kind folks from Holland and Barrett. I’ve linked to the key ingredients above if you’d like to try for yourself or just have a browse of the huge selection of products they have to offer.

Grain Free Chocolate Pancakes

Ingredients 

*Serves 2 generous portions

For the pancakes

*40g Protein Powder

*15g Coco Powder

*20g Coconut Flour

*10g Almond Flour

*Half a teaspoon baking powder

*200ml Milk

*2 Whole Eggs

*Coconut oil for frying

For the chocolate sauce 

*30g Coconut Almond Butter

*10g Coco Powder

*5g Protein Powder

*10g Liquid Sweetener (agave, honey or maple syrup)

*50ml Milk

Method 

Firstly place all the dry ingredients into a mixing bowl and mix together so everything is nicely combined. In a separate jug whisk two eggs and add milk, add the wet mix to the dry and mix together until a smooth batter form.

Melt coconut oil on a medium heat in a frying pan and fry each pancake (you can tell when they ready to flip when bubbles appear).

To make the sauce, mix the coconut almond butter with a little milk and sweetener until runny (you may need to microwave this for a few seconds).  Then add in the cocoa powder, protein powder and blend until thick sauce forms, I like this best slightly warmed.

Serve with fresh berries, yoghurt and a good strong coffee (or tea!)

Notes:

*I used soy protein which behaves differently to standard whey – Try using casein instead of whey for best results

*Add 50ml more milk if required but this works best as a thick batter
