Almond Butter Chocolate Fudge

Chocolate and nut butter, a simple match made in foodie heaven.

What about switching everything up a little? Blending the two to make your own custom chocolate bar or bite size chunks of nutty, chocolate pleasure? I love this recipe because it’s perfectly simple, as mentioned above you can make a bar (I’ll link to the mould below) or just use a silicone ice tray for cubes of chocolate fudge.

You can make this vegan, paleo or just enjoy the fact it’s absolutely delicious, easy to make and completely addictive…

Almond Butter Chocolate Fudge 

Ingredients

30g Melted Coconut Oil

100g Melted Dark Chocolate

70g Almond Butter (or peanut, cashew, hazelnut…)

Method 

Over a saucepan of warm water or on low heat in your microwave, melt the chocolate and coconut oil together. Once melted, stir in the nut butter until thoroughly combined and pour into your moulds.

Place into your freezer or an hour and then store in the fridge until eaten, this is normally good for 7-14 days, but it won’t last that long.

Tips

To melt chocolate and coconut oil using a microwave, I find that ‘defrost’ works best and avoids burning. Just make sure that you stop and stir every minute, normally about 4/5 minutes will do the trick, depending on your microwave.

I love these moulds for making my own chocolate/protein bars.
