There’s something about doughnuts that’ll always draw me in, it’s not just about the visual appeal but that unforgettable smell and taste of freshly baked goods.

These doughnuts can be made in less than 10 minutes, with only one bowl, using everyday store cupboard ingredients and completely fuss free with this doughnut maker.
A doughnut maker was a exciting new addition to my kitchen, it may sound like a surprising choice for someone health concious, let me explain…
When entertaining or in the mood for a fast and tasty sweet treat mini doughnuts fit the bill perfectly, the doughnut maker allows me to bake them fast, with almost no effort and with minimal cleaning. The beauty about the doughnut maker is that you won’t need to switch on a oven, the doughnuts are lower in fat and calories as they are not fried and the flavour variations are endless.
Let’s face it, who wouldn’t want a home that smells of freshly baked goods?
Makes 12 mini doughnuts
½ tsp baking powder
¼ tsp salt
45g Coconut Sugar
60ml Almond Milk
10g coconut oil
½ tsp vanilla extract
½ tsp cinnamon
Sugar free icing sugar for dusting (I use surkin)
Firstly – Turn on the doughnut maker, if this is the first time you’ve used it there may be a slight burning smell but this is completely normal.
Allow the doughnut maker to heat until the light indicates that the doughnut maker is ready for use, this is normally enough time for you to make the batter.
In a large bowl, cream the sugar, melted coconut oil, vanilla essence and egg until smooth (I used a hand blender for this) and now add flour, baking powder, salt, cinnamon and milk.
Using a hand blender, whisk and ensure the batter is smooth and lump free – This should only take a minute.
Carefully lift the lid of the doughnut maker and using a teaspoon, spoon the batter into each of the moulds and close the lid for 3-4 minutes.
Once the doughnuts are golden brown, turn off the doughnut maker and carefully remove the doughnuts (watch out, they are hot!).
Allow the doughnuts to cool, sprinkle with icing sugar and enjoy.
