Whilst I was browsing Pinterest, G looked over my shoulder and pointed out something that looked rather delicious. “It’s a deconstructed burger salad” came my reply. “That sounds very pretentious” came the reply. The following evening, we dug into our huge bowls of salad, smothered in seasoned mince, bacon, caramelized onions, and cheese, I realized thanks to Pinterest I was on to a winner.

You see, I love burgers, if we’re going out for dinner and burger is on the Menu? You bet I’ll be ordering it. I love veggie burgers, chicken burgers, vegan burgers, I’m really not fussy. Yet, in complete contradiction, I love salad too. However, it needs to be stated that I’m not really into a boring salad and this isn’t exactly going to top any health food lists soon.

Of course, carbs matter and a hefty serving of chips is the ideal complement to any half decent burger. So I chopped potatoes into chunks, drizzled them in olive oil, threw on some herbs, added garlic salt (Garlic on EVERYTHING!Apart from breakfast) and oven baked for 40 minutes. So, in a roundabout way, we’ve skipped the bread, added bacon and not forgotten about the humble potato.

Anyway, back to dinner time. We’ve started sitting down to dinner formally in the evening, it’s given me a whole new lease of life when it comes to cooking and gives us a chance to chat and have some quality time. Of course, there are moments when G drinks wine and wishes he wasn’t married to me and others when I drink squash and wish I’d completed my “To Do List”.

For the salad
  1. 2 Medium Potatoes
  2. Half an Onion
  3. A whole bell pepper
  4. One pack of bacon lardons
  5. 200g Minced Beef
  6. Mixed Salad (I used lettuce, pepper, carrot, broccoli and sweetcorn)
  7. 40g Cheddar Cheese (Grated)
For the seasoning
  1. Olive Oil
  2. Various spices – I used Paprika, Garlic Salt, Mixed Herbs, Onion Salt & Pepper
  3. Balsamic Vinegar
  4. One teaspoon of sugar
Instructions
  1. Start by pre-heating your oven to 180 degrees and setting aside a grease proof tray.
  2. Chop the potatoes into chunks, drizzle olive oil and herbs, then place in the oven to bake for 35-40 minutes.
  3. Now, chop the onion and peppers and fry with olive oil on a low heat for 10 minutes (don’t leave this unattended) then add in a tablespoon of balsamic and sprinkle on a teaspoon of sugar. Continue to stir on a low heat.
  4. In another frying pan, slowly fry the minced meat and bacon lardons, I fry them together because the salty flavour is so darn good. Add whatever seasoning you fancy, I’ve listed my choices above.
  5. Throw together some salad bowls with whatever you have in the fridge, grate some cheese, and top with the meat, potatoes, onions, peppers and cheese – We topped our’s with burger sauce.
