No Bake Chocolate Chip Crispy Bars

As some of you may know, I’m currently training for the ‘3 Peaks Challenge’ and I’ve been looking for new, tasty recipes for food I can enjoy on the go. I’m mindful of the fact I was strolling along the Gloucester countryside, with a sandwich in hand, trying to incorporate both training and fuelling.

Why would I want stop if I can eat and walk at the same time?  Well, friends If I’m honest, stopping meant sitting down, which meant that my legs would ache and I’d either a) struggle to get back up or b) have a soggy bottom or, final choice c) all 3. I went for option ‘c’, I’m always looking to get the most out of life, or something along those lines. 

I’m currently having a love affair with white chocolate, I’m fully aware it’s not ‘authentic’ chocolate, but it’s enjoyable and shouldn’t that be what matters the most? Whilst we’re on the subject of chocolate, a little pearl of wisdom for you that relates to this recipe and just baking with chocolate chips in general. The tip is to freeze these little chunks of delight, that’ll reduce the chance of them melting – Cool huh? 

Right, back to these bar’s, so here are the main selling points: They only take around 15 minutes to make, no baking required, you can add chocolate, dried fruit, coconut or whatever you fancy.

No Bake, Chocolate Chip Crispy Bars

You will need…

2 Cups Rice Crispy’s

1 & 1/5 Cups Oats

1/2 Brown Sugar

1/2 Cup Honey

1/2 Cup Peanut Butter or nut butter of choice

1/2 Cup White chocolate Chips

1/3 Cup Dried Fruit (I used Cranberries and sultanas)

Method 

Line a 11x 7 Baking Tray with greaseproof paper and set to one side.

In a heatproof pan, set your stove to low/medium heat and slowly mix the honey, peanut butter and sugar until a smooth mixture forms.

Then mix in the oats, rice crispy’s, dried fruit and chocolate chips – Transfer across to the baking tray, press the mix in firmly with the back of your spoon and place in the freezer for minutes to fully set. Once the bars are set, slice with a sharp knife and keep in the fridge for up to 7 days.
