Peanut Butter Pancakes With Spiced Apples

It’s official, the clocks have changed and I’m now diving head first into embracing all things Autumn. I love this time of year, I’m all about thick tights and winter coats, finding warmth in hot drinks and evenings in front of the fire with steaming bowls of stew. When the fire is lit and curtains are shut, the 3 of us just tend to flop in on the sofas and bask in the warmth, it feel’s like being wrapped up in a big comfortable hug. That’s what I was aiming for with this breakfast.

Of course, you can eat pancakes at any time of the year. However, if you have a little extra time and love to give to creating a truly satisfying Autumn breakfast, I recommend trying this.

You can swap apples for pears, or even the vibrant sweetness of fresh figs. Protein pancakes aren’t for everyone, so feel free to switch the protein for a banana, I use soy protein which gives a wonderful thickness to the batter.

Peanut Butter Pancakes With Spiced Apples

*Serves one generous portion 

Ingredients

One whole apple

20g Plain Flour

20g Oats

30g Protein (can sub for a banana)

150ml Milk (can add more if needed, I’d start with 150ml and build up)

Mixed spice (To taste)

20g PB2 (Powdered Peanut Butter)

Pinch of salt

One egg

Coconut oil for frying.

Method 

Around 30mins before you’re going to make the pancakes I’d recommend making the batter and allowing it to sit in the fridge to thicken up.

In a mixing bowl, mix together the protein powder, oats, flour, salt and peanut butter powder. Now beat the egg, and add to the mix with milk, as mentioned previously you may want to start with just a little milk and build up, we’re aiming for a thick pancake batter with this recipe.

Pop in the fridge for 30mins if you have the time (go read a newspaper with a coffee?)

Pre:heat your oven to 200degrees, slice your apple and place on a baking tray, sprinkle over mixed spice and bake whilst you’re making the pancakes.

Now heat up a frying pan and allow the coconut oil to melt, using a serving spoon, spoon the mix into the pan and once bubbles appear, flip over the pancake. Keep repeating this step until all the batter is used up and you have a plate of delicious pancakes.

Take the apples out of the oven, serve alongside the pancakes and add more spice and a generous drizzle of honey, agave, maple syrup or whatever takes your fancy.

    These sound delicious- perfect for after a run (batter in fridge while I shower?). Am about to have soup for lunch as I am freezing!

      That sounds absolutely perfect to me! Pancakes are such a good ‘long run’ recovery meal…
